Lemon Poppy Seed Cake

Ingredients

Cake

  • 1 Box yellow cake
  • 1 Box Instant Lemon Pudding
  • 1 Cup water
  • 1 Cup of vegetable oil
  • 1/4 cup poppy seeds
  • 2 tbsp lemon juice
  • 4 eggs

Fosting

  • 1 cups confectioners sugar
  • 2 tbsp lemon juice

 

Whipped cream

  • 1 C whipping cream
  • 1 t powdered sugar
  • 1 t vanilla

Directions

  1. Combine cream and sugar in chilled mixer work bowl.
  2. Beat with wire whisk until soft peaks start to form.  If using electric mixer, start slowly and build speed.
  3. Keep chilled and serve promptly.

Grilled Apple Pie

Ingredients

  • 6 to 8 Apples, Cored and peeled
  • Lemon
  • Pie Dough
  • 1 T Butter
  • 1 T Flour
  • 1 C Sugar
  • Salt
  • Cinnamon
  • Nutmeg

Directions

  1. Mix together sugar, flour and salt in med bowl.  Stir to combine.

Chocolate Sauce

Ingredients

  • 4 sq. bitter chocolate
  • Stick butter
  • 1 Can Evaporated milk
  • 1 Cup sugar
  • Pinch of salt
  • 1 Teaspoons Vanilla

Directions

  1. In heavy pan, melt chocolate with butter. Add milk, sugar, and salt.
  2. Cook 20 minutes or until sugar is completely melted.
  3. Allow to cool 15-20 minute. Add Vanilla.

Easy Peanut Butter Cookies

Ingredients

  • 1 large egg, beaten
  • 1 cup peanut butter (256g)
  • 1 cup sugar

Directions

  1. Preheat oven to 350F. Beat egg in large bowl. Add peanut butter and sugar.  Mix thoroughly.
  2. Roll into even balls, about 1 tablespoon each.

  • 1 can of condensed milk
  • 3 eggs separated
  • whites for the meringue
  • yellows for the cream
  • 3 lemons (squeeze juice and add to the cream)
  • The cream is the condensed milk with the juice and the 3 egg yellows

Betty Locket's Sweet Potato Pie

Ingredients

  • 1 9 inch unbaked piecrust
  • 1 17 oz can yams in syrup
  • 1 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon ground Allspice
  • 1/4 teaspoon ground Cloves
  • 1/8 teaspoon freshly grated nutmeg
  • 3 eggs beaten
  • 1 cup light cream
  • 1 1/2 oz Bourbon
  • 1 teaspoon vanilla extract

Directions

  1. Pierce sides and bottom of piecrust with fork at 1 inch intervals.

Sweet Potato Pie

Ingredients

  • 1/4 c. butter
  • 3/4 c. sugar
  • 5 oz. evaporated milk
  • 1/4 tsp. salt
  • 2 eggs, beaten
  • 1/2 tsp. cinnamon
  • 2 tbsp. cornstarch
  • 2 (16 oz.) cans yams, drained and mashed
  • 1 tsp. vanilla
  • 1 unbaked 9 inch pie shell

Directions

  1. Preheat oven to 400 degrees. Cream butter and sugar together. Add eggs and stir. Add sweet potatoes (yams) and mix well.

Yummie Brownies

Ingredients

  • 1 cup pecans or walnuts (4 ounces), chopped medium (optional)
  • 1 1/4 cups plain cake flour (5 ounces)
  • 1/2 teaspoon table salt
  • 3/4 teaspoon baking powder
  • 6 ounces unsweetened chocolate , chopped fine
  • 12 tablespoons unsalted butter (1 1/2 sticks), cut into six 1-inch pieces
  • 2 1/4 cups sugar (15 3/4 ounces)
  • 4 large eggs
  • 1 tablespoon vanilla extract

Instructions

  1. Adjust oven rack to middle position; heat oven to 325 degrees.
